This is a concoction invented by my teenager. She used the thin female types of spears and broke the ends off. Rather than trying to wrap a single stem, she bundled several small stems of asparagus together and wrapped them with a decent imported Italian prosciutto. She made several bundles, drizzled freshly squeezed lemon juice on them and then sprinkled them with parmesan cheese.
The only thing that made me wrinkle my nose was that she used the powdered in a can cheese. She did this so it would stick better. She had used the shaved aged imported parmesan before (sans prosciutto) and it just wouldn’t stick to the asparagus. Thus, she used powdered parmesan in a can.
It was delicious! She also makes a killer homemade hollandaise. It was truly delightful with the asparagus bundles!
